    Ingredients for the crust:
    280g all-purpose flour
    170g cold butter, (cubed or shredded)
    1 teaspoon salt
    6 tablespoons cold water
    Ingredients for the filling:
    140g salmon fillet, (boneless and skinless)
    50g broccoli
    50g mozzarella
    3 eggs
    250ml heavy cream
    1 teaspoon salt
    1 teaspoon black pepper
    Directions:
    In a large bowl add flour, salt, cold shredded butter, and cold water, and mix and knead until dough is formed. Do not overmix! Pat into a ball and flatten into a disk. Wrap it in plastic and refrigerate for 30 minutes.
    In a bowl beat eggs, heavy cream, salt, and pepper, and set aside. Cut the salmon into small cubes, season with salt and pepper, and fry in olive oil until fully cooked. Then fry broccoli only a little bit. Set aside.
    Roll out the dough on a lightly floured surface. Lightly flour the top of the dough. Roll until the dough is about 1/8 inch thick. Transfer the dough to a 9-10 inch (24-25cm) pie pan. Press the pastry onto the bottom and up the sides of the pan. Cut off the excess dough and gently pierce the bottom of the crust with a fork. Transfer to the freezer for 30 minutes.
    Preheat the oven to 350°F (175°C).
    Line a parchment paper over the dough and fill with dry rice weights (or beans). Bake for 15 minutes. Remove the weights with parchment paper and bake for another 10 minutes.
    Remove from the oven. Spread cubed salmon and broccoli. Sprinkle mozzarella cheese and add egg mixture. Bake until golden brown, about 30-40 minutes.
    Let it cool before serving!
