Shortbread Meltaway Cookies

  • Hello hello ho ho ho, it is time to make some cookies!!!
    Let's get to it!
    Here is the recipe if you like :)

    1 cup - unsalted butter, softened
    1/2 cup - icing sugar
    2 tsp - vanilla
    1-3/4 cups - all purpose flour
    1/2 cup - corn starch
    3/4 tsp - baking powder
    1/4 tsp - salt
    1 cup - toffee bits
    Preheat oven to 350°F. Line cookie sheets
    Beat butter, icing sugar and vanilla until creamy. In a separate bowl, combine flour, corn starch, baking powder and salt; stir half into butter mixture. Stir in toffee bits and remaining flour mixture.
    Roll heaping tablespoons of dough into balls and space about 2” apart.
    Bake in center of preheated over for 15 minutes or until lightly golden. Let cool for 5 minutes then move to cooling rack.

    I put 1,5 cups chopped pecans instead of toffee and corn starch, and get fantastic flavor.
