- Hi, everone!
This is the way to make the KIMCHI fast, I timed myself and it was about 2hrs and 35mins. It usually takes about a day to make Kimchi but if you follow these steps, you should be able to make it within 3hrs.
While waiting for the cabbage to be salted, prepare everything else!

napa cabbage, daikon radish, garlic, ginger, green onion, sweet rice flour, water, sea salt, fish sauce, sugar, plum extract, Korean coarse red pepper powder, Korean fine red pepper powder

When is the peak season for napa cabbage in winter I noticed very small napa cabbages they where a lot larger in other months!!?

Aug to Oct, Napa cabbages will be most likely tasty and firm yet Koreans make huge portions of kimchi in Nov to prepare ourselves for the winter!! Honestly, depending on where you are may determine the quality of the cabbages. Where are you if you don’t mind me asking??
