As a Viennese some hint on the water. Historically it was meant to clean your spoon in the water after stiring the milk foam as it was considered rude licking the spoon. Nowadays of course people dont know that detail and drink it 😉

In my experience they have more and more vegan and lactose free milk, probably not everywhere, and maybe not many different options, but they try to serve you at best.
And do NOT expect the waiter to be friendly! If he is, rest assured, you fell into some tourist trap. The Real Viennese Kaffeehaus-Waiter is a seasoned professional, more akin to an Army E-8 who you treat with all due respect and awe. Please, do never snap your fingers at him, you'll only do it once ...
I don't think I've seen a better made video about a city's culture. Absolutely beautiful. However, the first cafe you visit, Café Frauenhuber, is absolutely slated in their reviews as having rude and racist staff, a real shame.
It's a lovely video with one minor thing that really annoyed me. The presenter seems to have no clue about coffee and its quality. It is a given and quality marker when given a complimentary water. This functions as a palate cleanser and should be standard for any cafe that wants to position itself as a quality place. It has nothing to do with Vienna rubbing it into people's faces that they have great tap water. People of Vienna aren't that vein. If I don't receive water with my coffee, I know that the cafe has no clue about coffee culture and I will certainly not visit again.

I promise you that at 42 years old I am an avid coffee drinker who does care deeply about quality, the experience, and the history of coffee culture. I may not be an expert but, it has accompanied by adult life in many different contexts and countries. I've been living in Vienna for 17 years and I do honestly spend hours upon hours in coffee houses. In terms of speaking about the water, it is not by any means trying to make the city seem vain and I'm sorry if it came across that way. You are right that it does function as a palate cleanser after coffee, but the tap water in Austria is WORLD CLASS (literally. It has been awarded) something that the entire Vienna Now team wanted to celebrate and share and something that most tourists don't know about. Many tourists will order bottled water neither trusting nor realizing the high quality of drinking water that we have here locally. Unfortunately, there are so many places on Earth with no access to safe drinking water, and because water is nature's truest form of gold we wanted to celebrate lifelong hydration! So yes drink that water to cleanse that palate, but also drink it to celebrate (not brag about) that one of the many great gifts that we have in Vienna (other than beauty, safety, art, nature, etc) is fresh, clean, drinking water.
Whilst I love Vienna and the atmosphere seems lovely, as for the so called food that was served with the coffee, really? Melbourne is the coffee capital of the world and we also have the menu to match. Whipped cream over espresso 😖

The food is quite primitive, but their coffee culture is indeed robust. Having good quality water is also a plus. I'll give Vienna a B minus, mainly on the strength of their coffee culture. But for everything else in Vienna, you still got a long way to go.
