Nothing worse than buying a great piece of gear that you are afraid to use because it cost you so much. This is a great way to be able cut down on big purchases and spend money on gear that makes you: better, faster, or happier. That means it's more likely to mean more return on investment.
Found this quote from a Kevin Kelly article TODAY that sums this up longer than this 5 min video 😭 “Buying tools: Start by buying the absolute cheapest tools you can find. Upgrade the ones you use a lot. If you wind up using some tool for a job, buy the very best you can afford.”
That was me when i spent 300 on a custom leather knife roll. I didnt really intend for them to perfectly fit the pockets to my beater knives so now it's a lot less versatile if i want to upgrade my knives
Awesome advice! Not sure if you've done a video on this yet but I'd be interested in seeing one on the best places to purchase knives and other pieces in your kit. BTW, I'm a new sub and I'm binging your videos : )
Yeah I’m guilty! Buy stuff just to have it! But.......if I ever feel like using it, giving it away as reward for hard work to a subordinate, or feel like shuffling new stuff in another knife roll I know it’s there!!! Awesome advice for green cooks to live by.
another idea is to buy second-hand tools, much cheaper. almost all of the knives I have at home is second-hand. most of the other tools I have I've been given.

Unique approach I read/heard too many times ‘buy the best gear you can afford’
Can you do a video about your experiences at the French Laundry?
A picture of daily life working there, different techniques used there, what was TK like, etc...
