Don't know how that could have happened, Anita. You're the first to have had this experience. The rice flour thickens the coconut milk and has nothing to do with the sweetener- jaggery. And in my opinion, 110g ( almost 3/4 cup) of rice flour is more than enough for thickening the coconut milk extracted from 3 cups of grated coconut. You can see that in the video. You must have not cooked the dodol for the required amount of time. That's the only explanation I can think of. Also, you have to remember that the texture of dodol is like a shaky pudding/ firm jelly that is soft but holds its shape.
Can we store dodol without refrigerator or by adding a preservative. Pls let me know. I am going to try it out with readymade coconut milk . Will this be ok ?
Yes, Irene, you can add readymade coconut milk. Homemade dodol has a very short shelf life. So it's best to store it in the fridge within 2 days. Then you could enjoy it for around 15 days or so. I'm not aware of what would be a suitable commercially available preservative for dodol.

No, Diana. Traditionally coconut palm jaggery is used. But on amazon I could only order date palm jaggery and so that's what I have used in the video.

Can dodol be made without adding the use of sugar.
