Delicious. I didn't have the Enokies or Shimejis, but I did have shiitakes which I forgot to rehydrate. I used button mushrooms and 3 other kinds. But I never add salt when I use soy sauce and I don't like pepper. But this will become a permanent part of my Japanese meals. Something about the butter and soy sauce combination really makes this taste so delicious. Wanted to find a recipe like this.
shouldn't the one labeled enoji be shimeji, and vice versa ? doesn't really matter for this recipe, but i'm trying to figure what to do with my shimeji.
I think you've gotten the labels for the shimeji and enoki mushrooms mixed up at 0:37. Regardless, I can't wait to try this deliciously simple recipe!

I think she reversed the Enoki and Shimeji mushrooms on the photo at 0:34. Shimeji is the brown one.
I recommend cutting the oil. Cook down and brown the mushrooms! OMG good!

do you rehydrate the shiitake before cook it?
