I first thought you'd simply use soy sauce,sugar,rice sake and mirin. Unique choice of seasoning,herbs and spices! I'll probably put a pinch of coarse ground black pepper on this dish😋.
i just used the last of my rice vinegar, but i will get some asap to make this!! i love marinated mushrooms but have never tried to make my own. do you think it would be possible to use canned shiitake if i dried them off well before sautéing + marinating?
Dried shiitake wouldn't not work, but I don't think it would be ideal. The reason is that dried shiitakes (and most dried mushrooms) have a very strong flavor that would overpower the taste of all the other mushrooms. This doesn't have to be made with Japanese mushrooms, works with button mushrooms, creminis, porcini, morel or really any fresh mushroom.

I think it's the acidity and umami, the texture is different but the aroma is a dead ringer for a burger with hamburger sauce (ketchup + mustard + mayo).

The Japanese pantry has expanded a lot over the years, so most home cooking these days is halfway between Europe and Asia 😅
