Aren’t machines used during this process now? Is this an old video? It’s the reason why on certain leathers you can see a celastic toe outline through the leather due to being stretched by a machine.

Hand lasting can use thicker leather than machine lasting. So the shoes can last longer and be used for harder tasks

I don't get what stops the upper from just lifting up off the last when pulling in the heel area. What is holding it down?
