It is my most-often-used cookbook in my vegan library. Of course, I rarely follow the recipes exactly, I love putting little twists on them.

I just made this and OH MY GOODNESS! It is on another level of curry-the added steps and ingredients in the mortar and pestle make a HUGE difference. And the lime and zest is incredible. I did use coconut milk though because I don’t mind the extra calories at this point. Thank you so much!
This looks great but significant deviations from the linked recipe. A Tablespoon is actually 3 teaspoons, the recipe calls for 2 Tablespoons each cumin and tumeric but she used 4 tsp tumeric and 2 teaspoons cumin. The small jar of red curry paste contains 23 tsp of paste, and I the recipe calls for 2 tsp, but I think she said she used the whole jar. That is 10X more than what the recipe calls for. So just be careful in how you flavor your dish and taste as you go for your personal preference. I make a version of this already, but without the mortar pounded aromatics or the tumeric, so definitely going to up my game. Thanks!
She used half of the red currypaste. Turmeric is so healthy.
Don't forget to add one tomato and the jalapeno and I will adjust it to make sure it is not sooo spicy hot. Thanks for the recipe ladies

Coconutcream is too fatty for me. Your guest somehow reminds me of Elisabeth Taylor. She‘s a marvelous lady. I tried this today, but had to substitute a lot. I took cauliflower rice instead of kale, I had only chipotle, lemon instead of lime and so on. Oh dear! At least I had tofu, but no fresh one. I like it, but what will the others say? My husband loved it. 😁

It's that Indonesia food but if Thai parang not like that ingredients some different ingredients. I'm Thai. Some ingredients we not used it. Yep it is some different ingredients 😁 but this looks good too the color is the same.😊
The recipe doesn’t have tomatoes or jalapeños on the ingredient list, but in the video she is crushing the tomatoes, garlic, shallots, ginger and jalapeño with the mortar. Can you please update the recipe? Thank you. Looks delicious. Panang curry is my fav Thai dish.

Sorry about that! I used one tomato and 2 jalapenos. But you should adjust to your liking.
I as well noticed differing amounts for the peanut butter. Video-1/2 cup, written recipe stated 1 cup (which seems a bit heavy in terms of fat content).
Jalapenos are on the video but not the recipe too. I am just going to go for it!

I love all the ingredients and flavors that come together when combined. I usually use coconut milk in moderation to reduce the amount of fat, so I’m glad to know that soy milk will work just as well.

Being an experienced cook I questioned the 2 tab of turmeric/cumin but made it anyway since Jane raved about it-turned out being extremely bitter and unpleasant-I tried to balance out the flavors but was unable-I should have stuck to my intuition and used 1 teaspoon☹
I‘m so happy about this recipe! Next time someone has a cold I‘ll cook this. If I can wait that long…

I am sure I would love this recipe. It looks absolutely delicious. Unfortunately, I am a super fat absorber (even from plant food/sterols) and 1 cup of peanut butter and 1 cup of cashews would probably increase my cholesterol if I ate this regularly. I am sure it tastes delicious.
Could you use peanut butter or cashew powder? No salt, no sugar and very low fat...
@@pda2836 I will definitely try that. Would you recommend using the equivalent amount of powder? One cup of PB powder, for example, yields a different amount of cashew butter than 1 cup of the actual cashew butter.
They do cook a lot of fatty food with nuts & soy in their videos.
why don't you drink coconut milk?
Dear Jane, I happened to see a video with bananas where you asked your sweetest mom if you eat the peel of the banana, yes you can., the recipe is from chef Zana. if you are interested, be careful, however, it causes constipation and needs a combination with fibers.

Made this today and added a roasted sweet potato with roasted butternut squash with the other roasted items (garlic, shallots, jalapenos) and I'm so impressed with the satiety and flavors. Thank you SO MUCH!! ☺️
Looks amazing will make it this weekend, however I do feel this is what Dr Esselton would consider a ‘high fat ‘ recipe ? Please may I ask how you make your oil free home made red tai curry paste as bought one is full of fat and ‘nasties ‘ ty for sharing
I looked at the written recipe first, saw both PB and cashews, and said "this one is NOT for my family," and closed the tab. I may watch the video for the entertainment value but will never be making this recipe.
The joy of cooking is making a good recipe your own! Try this and make modifications to meet your diet - Good Luck!! The Esselstyn's have been using coconut extract (with broth or low fat plant milk) to simulate coconut milk in recipes for years. There is low fat peanut flour/powder, cashew powder, etc Give it a whirl and enjoy the benefits of all the "good for you" foods in here :)
I just made this - this morning for dinner this evening, the stew will have time to rest and integrate😊. I added tofu and used Rainbow Plant Life's method of boiling the tofu for 2 minutes in salted water. Thanks for the suggestion to use green beans and I used carrots that I had on instead of sweet potato. I bloomed the spices on the stove (easier than in the Instapot) and finished it in the Instapot. I can hardly wait for dinner! Thanks for the great recipe!

You health cooks should know that any cooked vegetables, lose most of them vitamin value, and are not to be eaten if possible in the second day. Perhaps you believe that the tastes are more blended however, they are no longer living vegetables. At least this is what was taught me by my AryuVedic doctor!!
