    So, it's boiled sous vide and then flash fried? BTW -- that is the _cleanest_ commercial deep fryer I have ever seen *ever* ...

    Just a thought, as a gluten intolerant person I realize I wouldn't be able to eat anything in Japan. I really like the way they process meat in this restaurant though.

      That seems unlikely. The Japanese diet is rice based, and the other major grain is buckwheat, both are naturally gluten free. Gluten containing foods are the minority, unlike in the West where they are the majority. It'd be very easy to live in Japan gluten free

      You can have stir fry like chinese food. But since some soy sauce had wheat.. Yeah thats probably where more of your problems will lie. In the seasoning.
      Else there are dishes that dont have gluten on their main ingredients, but seasoning maybe

      If you cook it sousvide to just the right temp. 60C, then it is perfectly fine

    Nooo...why are cutting he best part of the pork? Flavor, flavor are being cut away, just to make it look good?

    I am never a big fan of these new generation tokatsu where they will pre-cook the meat using a water bath. While the water bath will ensure tender meat, it lack that special taste from a real deep fry.

    Tonkatsu goes best with Kirin Class Lager :) The restaurant does not cook it enough for me. I don't like any pink but not overcooked.

    Not trying to be a Karen but does Japan kitchen industry have a chopping board system as I’ve come to notice when watching how ramen stores or restaurants are run they prep they use wooden or white chopping boards n this is not to disrespect
