I love this but the shop isn’t available so I’m unable to follow. I love the way the fox is coming alive. I was going to do this for my aunts birthday in November trust me it would take this long to do it, I’m sure it’s harder then it looks
How do you color code a image like this, what I mean by this , is how do you find the stitch pattern colors you have to use ? Or for any image how could I color code it and make sure I get the correct colors ?

She just uses different colors of strings on different sections of the embroidery. It's just like highlights on a drawing, if you don't know where to put them you could look at examples! :)

She actually mentions the name of the treads she is using During the video. The brand is DMC and the names are the numbers.
