Set the smoker at 170 and leave it alone for a couple hours, doing some other stuff. Over here in germany we usually don't smoke wild pork. Most of the time it will end as a roast. Or a "Gulasch" what is a thick savery stew with much of cubed up meat in it. Served with potatoes. We're smoking fish, legs of pork, whole turkeybreasts and sometimes cheese and paprika.

How can that pork be sold retail? In Texas, the Health Dept requires that the meat comes from a USDA approved and inspected source. This is kind of strange, because meats are brought in to Texas from Mexico and sold in stores, and they have no standards at all.
