    I am from South Africa. I grew up in the eastern side of south Africa....and believe it or not....but amadumbi, as we call it, the Zulu name for taro root. Is the only place in southern Africa that this root grows. It is like your son said just as good and even better than potatos. But what I loved the most was finding Americans who grow and dig and cook and eat from the earth. You guys are living the dream especially your backrop.... Wellingtons and all. Keep it up. N a personal thumbs up

    Well done eaten nice it can be mashed an add salt garlic an onions mix
    An eaten with roti in the Caribbean

    Do you no if they can be pressure canned ? Would you use potato or rutabaga canning times? Have not been able to find anything on canning them?

    can you make taro salad like potato salad?
    also can you just bake it like a baked potato?

      We made mashed potatoes one time, so I would'n't see why you couldn't make potato salad with it, but it may not taste as good. I don't think you should bake it like a baked potato with the skin on it.

    Hmmmm. I'm not aware that Colocasia contain significant amounts of cyanide. But, I believe they need to be boiled or steamed to remove not-human levels of calcium oxalate. About 30 minutes?

    So what is the difference of the flavor compared to potato? I use the potato water when I boil them to add flavor, but do you thro away the Taro water due to the cyanide?

      I like to drink the potato water too, but I’m not sure if you can do this with tarp.

    They have to be cooked because they contain calcium oxalate crystals.

    In essence you have made mashed spuds, instead of going through step by step why not say make the same as mashed spuds....?
