Not to change the subject, but you should buy a pork butt and have your butcher cut them into 1 1/2" to 2 " pork steaks and smoke them in the smoker and do a reverse sear. Thick pork steaks are soooo much better than the thin pork steaks you buy at the grocery store. Just an idea you might be interested in. If you haven't tried it yet.
