Thought Zoe left the states. Saw Nelly came to visit her buddy in NZ recently. Nonetheless, this is such an awesome treat! Glad to see your mom likes and enjoyed the sinigang. Aside from being drop-dead gorgeous, she is utterly humble and generous too for supporting Zoe's cause. And Zoe is down to earth. She has a big heart and a magnetic personality that's why animals love to cling on to her.
Btw, though the pork belly is cut up in big chunk for this type of dish, pork belly is basically bacon so your mom is right on the dot. And yes I agree with your mom and Zoe on using two packets of the sinigang mix to add more punch of sourness to the broth. I also use bokchoy rather than kangkong or whatever your preference is fine. To elevate your sinigang experience, put a tad bit of bagoong/shrimp paste (if you're a fan) onto a piece of pork and rice. It gives it an extra oomph and ohh-sooo comforting during rainy and/or cold days. Cheers from SoCal.

Sinigang is my favorite, occasionally I cooked it in here the US…. What I am missing though is the grilled Chicken at Mang Inasal…..I will be taking a trip to the Philippines sometimes this year and will bring my niece who loves Filipino foods.

Fish Sauce has to be Patis from the Philippines specifically from the Visayas Regions...Cebu maybe, I forgot the name of the brand..I think I remembered now it's Rufina Patis. Sinigang is our go to Soup in the Philippines. "AMPING MGA BESH MGA BAI".. 🇵🇭 😇🙏 😍 ♥ 🌹

they sell all kinds of fresh fish & frozen there was head salmon $1:99 per pound the fillet fish, salmon 🍣 it cost 💲 8.99 per pound on sale regular price is
$ 12.99, I choose the head salmon it’s not all head there are some salmon 🍣meat in it

As a Filipino, I kinda think adobo dish, pancit and sisig are overrated. I mostly prefer milkfish(never the pork) sinigang, kare-kare, monggo stew, ginataang bayabas, pinakbet, bicol express, ginataang alimango, red bean stew, white bean stew, black bean stew, adobong pusit, bulalo, pinikpikan, and other native dishes over adobo pancit, lechon, giniling, sisig, chicken curry and kaldereta. Though the media and public views them popular; however believe me, when you go to carinderia(filipino street restaurants), filipinos prefer the homecooked recipes ones rather than fried chicken and fatty ones.

I am subscriber. Your channel is the best!!! Regarding Sinagong, you must include the Taro-root! It is the starchy potato-like seed at the bottom of the Elephant plant? I am Not sure of that. But is is a very starchy potato-like ingredients that helps to thicken the sauce of the Sinagong. ALSO, as I am sure others have said, Pork belly is what bacon is made from in the USA and elsewhere. It is a slab from the pig, it's belly. It is sliced very thinly on the sides of the slab to make bacon. Your Mom was correct in thinking it was similar. Great video! You always have great energy and great ideas for videos that are pro PI. God bless you and your family. God bless your Mom for raising you in the way that she did! She is so cool! For me, Milkfish is my personal preference for sinigang instead of pork, because unlike milkfish, pork is rather fatty and also have unpleasant smell especially when soured.
My fav sinigang i normally use shrimp. Just Needs sawsawan patis with kalamansi or lemon then walahh

I'm Filipino American and I'm not a fan of Sinigang. I like other types of Filipino cuisine. Like chicken and pork rib adobo , Filipino beef stew, Pancit, lumpia, chicken pretada, Filipino bbq Chicken and pork , tacino, langonisa. Oh yah and Pancit Palabok. I like this small restaurant I go to in San Francisco california called " Babys Palabok and Eatery."
Maybe you haven't tasted the real tagalog sinigang!😁
