    Spare ribs are my favorite. I'm constantly having to explain to friends that they need to be mindful of the cartilage in the tip, it's my favorite part. I think I'll divide them next time and save myself the trouble, lol. I'll eat the tips on my own.

    Love the tip meat. I always take the whole top smoke it to color wrap it in foil with a Buffalo sauce and finish til it’s shred tender. Rest um in foil with some pork lard for a few hours. Shred them and use it for pulled pork tacos, sandwiches, or just plain. Goes over really well.

    Bradley, could you interject some clips or note when/how often you put wood on the fire? I know every smoker is different as well as wood splits, but I’m still new to using my stick burner and wonder if I should be using bigger pieces or if what I do now is normal. Just love the information about technique as much if not more than the recipes. Thanks. Peace!

    Pretty much a bbq and smoker newbie, so whats the difference between wrapping and allowing to steam vs just letting it sit out for a few mins after taking it off the smoker and cutting into it. I know the basics of letting the juices settle back into the meat but I don't understand how thats different from wrapping the meat and letting it steam. Wouldn't the meat already be tender from the time in the smoker?

  • @dieseldummy4250
    @dieseldummy4250 2 ปีที่แล้ว

    Round here, we cook the rack whole until almost done. Then separate the tips, then simmer them in sauce until the ribs are done. While the ribs rest, serve the tips with frys or a smoked tater. Then the ribs are the main course.
    Just how we like to do em. 🤷‍♂️
