Vegito purposely toyed with Buuhan to free his friends, unaware of the time limit. Vegito was literally trying to kill Zamasu and was going to finish it with a final kamehameha but failed in the process because he was unaware of the fact his fusion time would end
The cocky one is Gogeta, not Vegito. Vegito has a cocky attitude, typical of saiyans that get higher into their SSJ forms, but he takes fights seriously. Gogeta meanwhile has toyed around and mocked his opponents whenever possible in the fight.

Unfortunately, not that we know of. Potara fusion has a limit of one combination, so a potara-fused fighter cannot contribute to another potara or dance fusion. There's two potential loopholes tho: first, Potara works differently for Supreme Kais, so they might be able to keep fusing, depending on the circumstances. Second, it may be possible for a dance-fused fighter to use potara to fuse further, since it doesn't require any physical devices. And it may also be possible to layer the fusion dance several times, theoretically allowing for several people to become one. However, all of those ideas are only possible because the rules of fusion are still largely unclear, so any later arc could possibly make them impossible. On the flip side of that, if it were possible, it's likely that layering fusions would probably have problems anyway; powerful fusions take up more energy, and a layered fusion is much more powerful than a fusion, leading to significantly less time to do anything.
