Even if she's unfamiliar with it, as a Vietnamese, seeing rice paper, veggies/herbs, protein, and a dip, you know to automatically wrap it and dip it. BTW, I'd personally place the banh hoi down first since it's a big flat piece vs a pile of noodles, then lay on the bigger leafy veggies then herbs, and finish with the protein.
I normally make this dish at home and fry the rice paper for the crunchy bites as well. But in the US, we don’t have all the good veggie stuff that you have in Vietnam.
It’s like a DIY spring roll. I prefer green sauce, looks like they don’t have it here. Don’t know what it’s called but it’s creamy and rich I think it’ll go well with this spring roll! :)
For me that Nem Nuong Thanh Vân is just so so . The best Nem Nuong in VN is actually in Nha Trang : Nem Nuong Vu Thanh An or Nem Nuong Dang Van Quyen on Le Loi street - Nha Trang . Looks Good is Nhin Thây Ngon or Trong Thây Ngon . Instead of saying Co Tot Bung , you should say Co De Thuong
Your lovely was correct in a way from what I know leaving a piece of food on the plate in a lot of Asian countries signals that you have been given an adequate serving to satisfy your hunger but if you clear the plate it may signify that you are still hungry and if you are dining at the invitation of a friend /business acquaintance they would feel obliged to order more food for you !

Foreigners often made the mistake of thinking of prices in terms of their Home currency, instead of the Host currency Dong. Keep doing this will lead to overbudgetting. Remember the expats ' income is based on VN income, in Dong, when they go out and eat, they switch and think the prices in term of the Dollar or Euro, see the difference?
yeah that $7 guess was pretty spot on. When I check the actual price during the editing it was like $7.02. Gave myself a little pat on the back for that lol. But yes the prices of things like this, meals at humble restaurants, have to accommodate to the common salary in any given place.

You comment about questionable cake or banh made me laugh. They should totally translate it as that for the English name. Bwhaha! You should go to Nha Trang and try that dish there and compare as that's where it's famous. And you should have totally wrapped the fried spring roll up in the veggies/herbs, and banh hoi then dip. When we make fried spring rolls at home as a meal, that's how we eat it.

yeah the banh hoi on top of the rice paper probably would've helped keep the cuon from ripping
