Coconut Rum Balls
Ingredients:
• 4-5 cups tea cookie crumbs
• 1 package vanilla sugar
• 3-4 tablespoons cocoa powder
• 2-4 tablespoons rum extract mixed with 4 tablespoons apricot jam
• 3-4 tablespoons powdered sugar
• 1 cup unsweetened fine shredded coconut (plus extra for rolling)
• 3-4 tablespoons soft unsalted butter
• 4 tablespoons melted dark chocolate
• Cold brewed coffee (as needed for texture)
Instructions:
1. In a large bowl, combine the cookie crumbs, vanilla sugar, cocoa powder, powdered sugar, shredded coconut, butter, and melted dark chocolate.
2. Mix in the rum extract and apricot jam mixture. Gradually add brewed coffee until the mixture reaches a soft, moldable texture.
• If the mixture is too soft, add more cookie crumbs.
3. Shape the mixture into small balls.
4. Roll each ball in fine shredded coconut until fully coated.
5. Store the rum balls in a cold place; they keep well for a long time and are ideal for gifting or serving during the holidays.
