Great review! The Intel N100 is 12th gen which is very good performance for the price, comparable to a 5-year-old Intel i5/i7 laptop. Way better than those older celerons in cheap laptops. Basic tasks seems to work great. Gaming will require a better GPU, but for this price you're not expecting to game on it.
Chuwi are very good at budget laptops. Moderate your expectations and they are pretty useful machines. Shame about the USB charging, but can't really complain at this price

Maybe you accidentally disabled the touchpad from the keyboard shortcuts. Look at the keyboard to see if there is shortcut to enable touchpad

Not sure. But it performs quite well with W11 so there is no compelling reason to use W10
