With the model thing with devil fruits, we’ve already seen it a couple times. For example: Ox-Ox Fruit, Giraffe Model for Kaku and Ox-Ox Fruit, Bison Model for Dalton. You also had Mutt-Mutt Fruit, Dachshund for Lassoo and Mutt-Mutt Fruit, Wolf Model for Jabra. Basically it’s kinda like sub categories for animal groups within zoan type fruits. So they’re snakes but not just like generic snake or embody all snakes, but are a snake but specifically a King Cobra.
To clarify: Every devil fruit is unique, but some of them are pretty specific. So if two devil fruits create snakes, they are usually different kinds, like a anaconda and a cobra. Or let's say you have a panther and a tiger fruit.
Regarding the 2 snake-snake fruits: There can be 2 models of a devil fruit that are similar but not the same. For example the snake-snake fruit can have different variants based on specific species of snakes like python, cobra, rattlesnake etc. So there can be many users of a snake-snake fruit but only 1 with that specific model. It also applies to things like cat/dog breeds.
In regards to your snake-snake fruit confusion, think back to cp-9 zoan fruits like lucci's cat-cat fruit: model leopard or the dog-dog fruit: model wolf. Zoans tend to have sub classes like that for creatures that are in the same family so just as an example there may be a cat-cat fruit: model jaguar or lion or whatever they are very similar but have their differences

If you read the certain title cards for the sisters again, you will see that Marigold has the Snake Snake Fruit Model: King Cobra and Sandersonia has the Snake Snake Fruit Model: Anaconda. Because Zoan as we have seen so far takes great inspiration from animals, it wont come as a surprise for similarities to occur due TAXONOMY/Animal Kingdom. Thats why there are same fruits with different sub-species or MODEL.
So yeah, haki is a foreign concept where you are at, but it has been shown throughout the series. People in skypiea used mantra, which is haki, yes. On the other side, we have seen Shanks use haki, and now Luffy use conquerors haki. I'll leave it at that because it will feel "spoilery" if I extend it; later on I can definitely further branch on that concept though.
The thing about df and haki, you can see it as dreams and willpower or privilege and drive/willpower. The df will give you a boost in power that you don’t have to do anything to get while haki is something that you have to train to be able to use. Of course, you can see haki as a different type of privilege, not everyone is born with the potential of mastering it - or in the case of conquerors - born with the potential at all. But haki is good against df because someone with the drive to achieve something is more likely to achieve it than someone who’s just dropped halfway through but lacks the drive to achieve the goal. Idk if I’m explaining this any good 😅 Oh well…

More on devil fruits are yet to be revealed, but just mentioning, Shanks knew what Luffy ate was the gum gum fruit, so it is somewhat possible to have knowledge on them I think. if there are similar snake fruits maybe if people knew which fruit is which, you can get both. I think people who knows devil fruits know atleast some and then there are some that are unknown.

Yeah, some down fruits are just in their own category individually. Examples could be an elephant or bear zoan.
