I've found that the ambient temps on these types of thermometers are not accurate. I believe they are too close to the coolness radiated by the meat. Once the meat comes up in temp, they seem more accurate.
No, you should cook pork ribs until the meat pulls back from the bone. I usually cook ribs about 4-5 hours at around 250º F. You cannot measure ambient temperature with these spikes not being in any meat. I've tried it and broke a set.
If I put the probe in the oven without sticking it into the meat. And the temperature in the oven is 400 degrees Fahrenheit, will it ruin the probe? Will the internal sensors or even the entire microcircuit and battery of the probe be ruined?
Just a tip... The thickest /densest part of the chicken would be the breast, not in the joint between the leg and thigh. If you monitor the breast, you'll cook it to the right temp to be fully cooked, yet still moist and juicy.
I do not use a bluetooth thermometer, rather I have a Thermoworks Thermapen and one of their Smoke thermometers which has a wireless component but I don't think it is bluetooth. and haven't used the wireless portion to date. I grill from a wheelchair so don't venture far from the grill, if you know what I mean.

The black probe is making contact with the leg. Wondering if that might affect the ambient temp for that probe

Yes, I broke two probes doing exactly that, but in a grill.

I have an instant read digital thermometer as well. Use it all the time. Cheers!
can you use 3 temp spikes on the TP972
The base will only read two spikes. You would need a second base.
