    I'm a C.I.A. grad,' Class of 1973, and the first graduating class at Hyde Park. The best 2 years of my life to that point were at the C.I.A. I was fortunate to be taught and guided by some great Chef Instructors like Pastry Chef's Walter Schreyer, Albert Kumin, Noble Masi, and Ed Bradley. Then there was the late Chef Jim Heywood for Garde Manger, Chef Bruno Ellmer International cooking, Fritz Sonenschmidt for Garde Manger, and several others. It was a fun time to be at the C.I.A. and in the Hudson Valley.

    I'm doing culinary at Diablo Valley College in Pleasant Hill CA! Where there are a few teachers and chefs from CIA! Thinking about going here in the future.

    I want to become a pastry chef but I think if I go to these school I would be swallowing my spit if I see the food every sec so it’s holding me back why ☹️

    For some reason I feel like the other courses are more challenging but I really like pastry. Even if I learned some of this already I'm probably still wishing to to here for the pastry course when I'm only 11. I'm not sure how my family would react to this tho. They want me to be an engineer or a doctor.

      go for your dreams! but to make them feel better about it, practice a lot in your kitchen, so they get used to seeing you work with food, and they see your talent improve. Parents only want to be assured that their kids will be successful and live a comfortable life (which is probably why they want to push "safe" professions on you), so if you show them how your talent is growing, by the time you apply for college they'll probably be ok with it!
      You're only 11 so you have 7 years to change their minds

    As a junior in high school, college hunting period is coming near and once I laid my eyes on this school, it has become the ideal college that I yearn to get accepted in. However, I am not very sure about it for the tuition is pretty hefty and I feel as though I won't catch up with the others. I am very passionate about the culinary world and I often bake at home but its nowhere in the advanced categories and I feel as though students who go there already have experience in a bakery or a restaurant. Also, does anyone know the requirements to apply for this school? Requirements as in SAT scores, recommendations and etc. It would be greatly appreciated if I got some feedback on this since no one around me have the same goal in mind :/ THANKS

      Hi Michelle, I understand the stress that u are going thru to look up information on the school, but a great way is to get in contact with them. I am currently a senior, and I have also already applied to start in January 2020 in NY, it's true that the school is expensive but after doing some research the school will give you all the information after you have been accepted or if you visit the school. Hope this helps.

      Michelle L i got accepted it and all you need is a transcript to apply and that’s it, it’s pretty easy to get into the school

    I'm lucky enough to have the CIA a few hours from home, but with $16k+ a semester I can't afford to go... especially when Pastry Chef's are barely even making over minimum wage.

      lmao 5k a month as a pastry chef? even if you work 50 hours a week thats lke 25 dollar an hour wich is more or about the same a head chef would make in america.

      Makayla Walker I've done research and a Pastry Chef starting out can make a minimum of 43k a year that's more then my wife makes and she's a E4 in the United States Navy

    Hey, so precooked method is definitely not for making custards, it's for making pate a choux....and blending method is not for cakes. Foaming method is :O

    Think very carefully about paying 60,000 dollars for two years of tuition for a job that might pay 19.00/hr after five years. Ive worked with undocumented immigrants who've never gone to pastry school and are quite good at what the job is, and that is all an employer is looking for anyway. Waste of money.

      You have a good point. For me, I'm willing to go to this school because I don't have much prior knowledge in the field. This program also offers an externship, which means you could get hired and I'd like that because I really need a boost on having other expenses such as a car, place to live in, etc. When you get this degree, you could become a baker or pastry chef. The occupation I'm choosing is a pastry chef. By making $19 an hour, you could make roughly 40,000 to 45,000 USD which means in 2 years, you'd make 80,000-90,000. Paying 60,000 for 2 years and making 80,000 in the next 2 seems worth it to me. I know I did not include factors such as taxes, expenses, and other things but this is me putting in the simplest form.

      Camerin Davs 2 years for associates degree whether in culinary science or baking and pastry, and then if you want to continue onto a bachelor's degree that's another 2 years. depends on what you want to do really

      From a sales point of view only. If your selling a baking program. even though it is an essential class, it is not what i am looking for. if you looking for a diamond, don't show me a ruby in the middle of a bunch of diamonds.
      Any pastry chef should have some kitchen skills. It improves them, and helps to keep a better symbiotic relationship. with the kitchen

    Do not waste your money on cooking school, it is a waste of money. Start off as a dishwasher in a good restaurant and work your way up
