    Sadly, my allergies to seafood is what kept me from going to the CIA out of high school. Can't be a great chef if you can't taste the fish!!! but I have mad respect for those who have graduated from this fine institution.

      Sure you can be a great chef with seafood allergies. Just work beside other chefs with no allergies. The only limit you have are the ones you set for yourself.

    Chef Reilly doing Banquet service? One of my favorite Chef-Instructors, I had him for Garde Manger 1&2. He took no shit whatsoever and made you a better person. Plus his knowledge of the culinary world was unmatched. If you ever read this Chef, thankyou.

    my son who is now a junior in high school and his second year of culinary arts has his heart set on CIA. As a mom, I am attempting to take the opportunity to watch all the videos I can to better educate me before sending my son 1700 miles away.

    I was only able to attend the CIA for first year but it was one of the best years of my life. I personally had the two fabrication chefs in this video and they are both very knowledgeable and have my full respect while demanding only the best from their students.

      First semester is one long beginer class in the kitchen that last the full semester and a couple of classroom classes that are a little shorter. Second semester the classes are much faster and they are only three weeks each.

    Oh God do I miss my time at the CIA... Feel slightly cheated though as I went through just as the food program was being updated.. I think three months after I graduated from the AOS program was when the new curriculum was unveiled.. I don't even recognize the place when I go back today..
    Best four years of my life, EVER.. The passion, the freedom, the knowledge, the joy, the enthusiasm... I would give my left arm to go back and do it all over again...

I had been in the food industry in one way or another for about 8 years before I went to college, starting at 15 as a dishwasher at a local ice cream parlor and helping out with the grill there. Since then I had worked as a baker's apprentice and then a baker (3.5 years total), then a baker and prep cook for the chef and banquet chef at another place down the road from the bakery; then a grill/fry/garde manger cook at a local Italian restaurant for about 8 months before leaving for college.
      In all, I'm now in the industry for over 25 years now.

      Takes a lot more than school to do that... After spending almost $100k on school, you will need the same again to open a well equipped restaurant and at least 10 years of practical experience to know what you're doing. School is a start, but for a culinary education, it's a terrible one.

    Would I be able to attend/go through all of the classes if I am vegan? I would be fine with cooking with animal products and making meat dishes, however I would prefer not to eat them. Cooking is my passion and I hope to work at and/or own my own restaurant in the future (where I would serve non-vegan foods, hence why I'd like to master the techniques associated with them).

      Im almost 100 percent sure that you'd be able to go to culinary school without having to eat meat, my guess would be that the teacher and other students could explain the flavor and taste to you rather than you having to taste it yourself.

      One thing I learned from working in kitchens is that although you don't like something or you have a dietary habit outside of an allergy, you should get in the habit of trying foods so you can get an idea of the flavor and whether it tastes right.

      I currently attend the cia. If you’re vegan it’s all good. Nowadays the egg is really focusing on cooking more towards the vegan side of things. I personally eat meat everyday. But you’ll be more than welcome in this school if you’re vegan.

      No, you just have to show proof of your certification to one on the admission Counselors. I already did this and won't have to pay for or attend the class.

    How old does one need to be to take this course? Like I'm Currently 18 and doing a Culinary Arts course in India but the problem is as you know Beef and Pork are banned here so my knowledge would be restricted. Hence, I wanted to take this course after I'm done 3 years. I'm in 1st year by the way.

      I don't know if there is an exact minimum age, but there are many 18 year olds on campus. I see students who get their Bachelors in some other field and come here. I even see an occasional 40 year old, hoping to improve themselves every once in a while. If you have a burning desire to be here and know what you're getting into, the school will likely happily accept you

      The CIA is a fully accredited college, so all students are required to have a minimum of a high school diploma or have completed their high school equivalency in order to attend. We do not require restaurant or culinary experience prior to beginning the program, however, it is definitely encouraged. As well, we take a holistic approach to reviewing all applicants, meaning we are looking for well-rounded students who have a strong passion for the food industry and are looking to become future leaders in that industry.

    Today we will do about a 100 covers in 45 minutes but there is 12 people in the kitchen thats pretty busy wow i did apprenticeship the reason they pay so little in this feild is that they get 12 people who are all doing one thing to make a plate come together i do 200 covers an hour with 4 cooks and the food is made to order each time mise en plase

      FellowRser Yes, however it is a culinary math class so unlike a standard college it is designed around the culinary/management world. If you do the bachelors program there are more general eds however and those tend to be much less oriented around food

      This is for the associates program. It's 18 months and you get a 2 year degree. It's for people who are extremely passionate about cookery. There are only 11 certified master bakers and 67 certified master chefs in the whole USA. Of those, 3 master bakers and 3 master chefs teach at the Greystone campus. That should be enough to convince you to attend the institute.

    I gotta say this is the best college ever. It's a lotta mind work but its worth it. Too bad it's expensive I mean I work but don't have enough income. I would say people from my family are money addicts. Especially the ones that are outside of the United States!

    Do you need to learn how to cook to attend to this school or do they teach you from the VERY beginning ???

      They teach you everything from how to hold a knife and how to peel a carrot to how to properly blanch different vegetables. I highly suggest working in a restaurant setting before attending the institute just to see if you truly want to pursue a career in the foodservice industry

      The CIA does not require experience prior to attending the program. Every student, regardless of prior experience will begin with the fundamentals and build through our program. However, having some experience prior to starting the program is definitely encouraged. The more experience you have, the better off you will be.

      The CIA takes a holistic approach to reviewing applicants, meaning that we look at the entire student and not just one specific area when making our admission decisions. While academic achievement is certainly an area of focus for our review committee, several other areas are taken into account, including foodservice experience, passion for the industry, well-written essays, and strong letters of recommendation. Do not let your GPA discourage you from completing your application. You may be surprised by the outcome. Furthermore, there are plenty of options for students who may not be admitted their first time applying to the college. One or two successful semesters at a community college that show growth and academic improvement can not only get you admitted to the college but can also award students transfer credits for a number of general education classes (which will save money).

    So I'm 14 and when I grow up I really want to open a bakery or a restaurant but I really really really want to open a bakery and so I'm both talented and cooking and baking and I'm known as the Cook or Baker of my school because I'm always bringing in stuff that I made and giving them out but then when I look at stuff like this I feel like I'm the worst cook on the planet so then I go home and I just raid my kitchen confidenceto make food my mom gets so angry at me until she eats my stuff and then she's just like oh blah blah blah I could use this in this in this so I followed her Direction but I never feel like any of my dishes are good enough do any of you guys have advice to build my confidence

    to anyon that attends this school. if you are vegan do they require you to take the meat classes and use meat if you do not want to?

      Yes, you would still have to take the course and work with meat products as that is a large component of our curriculum. However, you would not be required to eat any food that you did not want to.

    I had an applicant come to me for a job. She had her certificate with her. Interviewing her I asked her some questions. She didnt know what a roux was. "Oh, you mean a "rouks"? I said "no I mean a "roo".Thanks for stopping by. Good day". How did she get through two years at J&W saying "rouks"??? I no longer interview two year graduates. I will train from scratch when I cant find a four year grad.

      For many people it is. However, the school has a good approach on reducing stress to somewhat manageable levels by gradually moving you through each class, gradually acquiring skills to be used later on. One chef here taught me that the first year is like grade school for a kid. What you learn in second grade stems off from first grade, and so on. The only problem is that here you're doing so in such a short time frame. Aside from the starting cooking course, the other cooking classes are only 3 weeks long, not giving students a great amount of time to fully understand and appreciate all the skills they've learned
