You can use Thick coconut milk instead ...... But add it once the whole recepe is done (ie at last) to avoid its curdling or before seperation of its own oil....for it you may cool the pongal to a warm or semi hot temperature ......

We add dry coconut grated to jaggery syrup its a must and some wven add ghee fried coconut pieces as topping with cashews and raisins.

Nice recipe but 2 cups of Jaggery seems too much, rest is all okay.
