I use Grafted Polychloroprene Adhesive "Bond-Tech" local brand in Thailand. But you can use normal wood glue/ contact cement from Pattex or Dunlop or else. (I'm sure there will be good one). For the pricking iron normally I use size 3.38 as it can use in many type of bags. Also you can use diamond type pricking iron in size of 3.00-4.00 mm too, that will be easier.
Yes, of course can do it by sewing machine. When I make demo to test pattern before video shooting I use sewing machine. I just like the hand sewing method more :)

For hand stitch I use waxed linen thread.
Piping is plastic tube (its come in about 50-100 meters)
For my piping I used the plastic cord that you use in your grass edge trimmer in Australia we call it whipper sniper cord.

It's texture may look like grosgrain ribbon as you mentioned.
I bought from local shop in leather street of Bangkok (I'm based in Bangkok, THAILAND).
