Nice video! If I were you, I'd check a couple of videos on YT, where they replace the hose on the Maxi Trac compressor with a "T" brass fitting with a quick-connect on one side and a pressure switch on the other. Incase you forget to open the ball valve, the pressure switch will shut off your compressor, so it won't damage anything. Plus it would make for a nice video!

Why cut off the male coupler that was attached to the compressor hose from factory just to put another one on? was that just preference to have all the same red matching ones?
The line was to small and I didn’t want any restrictions. The fittings I used would not fit in that small of a hose.

I did mine with 2 hoses. For some reason my gauge shows 60+ psi, almost double what they actually are

Not sure how you deflate with this or do you use something else to do that with?
It’s very easy, unplug the line from the compressor, leave all four tires hooked up and then open the valve. Air will flood out and when you close the valve you can see how much pressure is in all four tires with your gauge.
