All excellent ideas and recipes. I appreciate all the time you put into it. And varying the grains/starches and proteins. I've never tried Japanese sweet potatoes but I think I saw them at Sprouts. I used soy curls this week in white chili. It's just my second time using them and they take some time getting used to for me. I think your barbecue recipe would be a great way to have them. Disguise the spongy texture I think. The other recipe I used them in was a curried pasta salad with pineapple. Too funny about the garbage man! There are gloves to use when using a mandolin. Maybe that would be helpful. Or just don't grate that last little bit!
Yes definitely experiment with the soy curls, they’re very versatile in how you can cook them. And someone else told me about getting gloves for grating things - I think I should get them since I’m way too accident prone to be trusted with a box grater 😅

And whoaaa those butter chickpeas sound amazing and will be happening in our near future. BTW, I made your mocha overnight oats. We loved it! I omitted the cream topping and chocolate chips (as good as I bet they are) but your ratios are perfect. I used Dandy Blend for the "coffee" taste. Excellent for us non-coffee peeps.
I don't actually have a full recipe video for it on the channel yet, but here it is for you :) 2 cups jasmine rice, rinsed 2 cups canned coconut milk 1½ cups water or veg broth 1 thumb of ginger, minced/grated juice of 1 lime pinch of salt Combine all ingredients in a deep saucepan or pot and bring to a boil. Cover and reduce to low and cook for 25 to 30 minutes until all the liquid is absorbed. Fluff rice with a fork and serve. ENJOY! 😊

Great tip courtesy of earthy goodness kitchen, a potato ricer is great for squeezing the water out of soy curls etc.
