i'm from Mazatlan and i never liked the "Tripa" intestine taco, but some friends and family LOVE them, it's the first thing they ask when they get to the Taqueria "do you still have tripa?" because usually it is limited and the first thing to sold out. You said it, it is an acquired taste or just not for everyone

Tripas de "que". There are tripas de leche and tripas de rez (which are part of the fecal track in cows. I prefer tripas de leche, which are milk gland, much better flavor.

As soon as you move to a new neighborhood or city, you get yourself busy looking for the best price-quality. And it is a good date spot, and with bragging rights if you take your partner to a better spot than they are used to 🤣 You'll see them there with their family next time you go yourself.
Chihuahua cheese is amazing! I used to fly there for business trips and their cheese was definitely something that the people there was so proud of! Not that I had many different Mexican cheeses - but 100% this is so good! It's funny the locals pronounce Chihuahua with a 'sh' sound... like "Shihuahua" lol. Dude TRIPITAS TACOS is so good!! Didn’t grow up with them, but I love tripe as well. Not my favorite but I like. And it’s hot or miss. If not done right it can be very chewy, like eating rubber bands. But when done right, a beautiful cut.

Hey Carlitos just a heads up on the "Guacs" guacamole your experiencing out there in the culinary street food world in Mexico. Many places are serving you fake / phony guacamole.. What many folks do is they mix maybe 1 avocado and add 3/4 mexican squash or more "calabasitas" and mix it up to stretch>> the guac add on garnish. When you see it super creamy and green like a pastel color, it's probably loaded with calabasitas and the taste becomes quite similar to avocado. True avocado will mix up chunky while creamy depending how much it's battered up. Also the color is different. However the fake one does taste good and fullfills your taste buds however it's not a true fully made traditional mexican guacamole. A true honest taquero will admit to it and tell you how it is. Some food preppers even add milk to an avocado mix for that extra smooth creamy presentation. Just an FYI😉. The street food in Mexico is the best food you can eat. I’m from Italia but live in Puerto Vallarta and the food is number 1. Luckily we Italians that live here and opened restaurants so I still get it in and get to speak Italian. Everyone needs to go to Mexico once if they can. The people here are very very friendly and inviting. It’s a beautiful country with many different sites to see. The food though it’s absolutely the best and but no way I can eat intestine. Great video as always!!
What part of Italy are you from? Because one of Italy’s best dishes is Trippa which is the same thing but in a stew, I’m half Italian, half German, we also have a tripe dish in Germany but in Italy it was a popular dish maybe it’s in certain parts of Italy.
I’m from Torino Italia in Piemonte. I never said I didn’t see did I? I don’t like in Italia or Mexico or Germany. It’s not my thing regardless. Just because you are from somewhere does not mean you have to like it. We also eat Horse meat in certain parts of Italia not for me but many love it. I’m not sure of your point.

Just so we know, "tortillas doraditas" are crunchy, or crispy (not necessarily fried) tortillas. And "carne asada" is grilled beef, not roast beef.

Tripa has to be crispy. This is probably the most controversial taco because not everywhere is well done.
Omar you are absolutely correct the tripa has to be crispy not chewy and like e everything else it is not for everyone

I worked in Mexico off and on for 2 years as a contractor for my company and I've eaten things there that I still don't know what it was. I attribute my experience in Mexico to making me immune to this Corona virus and everything else. I loved the grilled tortillas and especially the cactus

Here in Indonesia, I think most popular protein source are chicken, fish and beef. So maybe we eat fish almost every day.
Yes we fried the fish and eat it with rice and beans or we make fish tacos or you can make maricos style with fish but much love to Indonesia 🇮🇩🇲🇽🇺🇸
