They should have at least split the egg over a cup to separate the whites and then add the clean whites to the bowl. That way if one yolk breaks then you haven't ruined your whole batch of whites.

It's probably a cultural thing, different tastes, etc. And I don't think the chocolate will burn, since the cheesecake is baked at a lower temp and in a water bath.
I think she doesn't know that milliliters are used for volume, and so she weighted the milk, even though the measuring cup had a milliliter scale. She'll know go on thinking that milliliters is another word for grams, hehe.
sorry for hijacking comment, here's my personal tips on not getting lumps (from my experiences making jiggly cheesecake): stir in the flour slowly??? sift a little, stir thoroughly, repeat. people seems to think sifting = no lumps, but sifting all the flour in then stir just result in lots of flour sticking together, forming lumps.

Sari I use a springform pan when I make cheesecake normally and never had a problem with water leaking in. But by using a normal pan eliminates the problem of water leaking.
Try wrapping tinfoil around the bottom of the pan, it should stop the leaking. Most TH-cam recipes that make cheesecake in a springform pan do that and it seems to work.
Tip to make removing this from a pan easier: Put a long strip of greaseproof paper in the pan before everything else (including the circle), long enough so that the ends stick out like two 'tabs' on either side of the pan. Then just use those to lift the cake out at the end instead of inverting the pan.
To make it taste more like cheesecake, add more cream cheese. I normally use two packs, also don't have to waste all them eggs just for the whites. Just use the whites from the eggs you broke to get the yolks. Also a squeeze of lime, so it doesn't taste eggy. And ta da delicious tasting Japanese cheesecake that tastes like cheesecake.

The best way for separating the yolk from the whites is shifting it in between your fingers bc ur fingers aren’t pokey and shifting it in the shell might break bc if the edges of the shell

The reason why your batter got clumpy is because when you pored your hot cream cheese and butter into your yolks they cooked because it was to hot
