    I made this tonight, served with rice noodles, lettuce, cucumber and carrot...so delicious! I used all of the optional ingredients other than the shallot (didn't have one in the house) and used both dried and fresh garlic. I had no annatto so I went with smoked paprika for color. The meat was 2.5 lbs of pork shoulder with the larger fat deposits removed, marinated for about seven hours. Oh my god, the smell when it's grilling...absolutely divine.
    Thank you so much for this recipe, I'm definitely going to be making it again! I'll also probably try the same marinade with chicken thighs. You're the best, Fish Sauce Mama! 😍

    Is the pinned response from Natividad an updated recipe? which one should I use? Also the restaurant I go to has as very distinct tasting/smelling rice and the dish is called "com tam" thit nuong, broken rice/char grilled pork. I want to try the latest recipe from you on the pork. Do you have any tips on how to make the broken rice perfectly like the restaurant quality rice? My rice is never as good as the restaurant. When you look at it, there doesn't seem to be anything added to it, it just had a very distinct subtle taste/smell and I can never get the rice part of it just right. Do you think they put something in the rice too for flavor ? Maybe I should get a real rice cooker? I have to figure out how they make this dish !!

    Your lemongrass was frozen? Do you do anything special to process and freeze it? I bout ground lemongrass to try but haven't used it yet. I always get large cans of bamboo shoots and water chestnuts. Do they freeze? These look so good!

    • @fishsaucemama
      @fishsaucemama  3 ปีที่แล้ว

      Yes, my lemongrass was frozen. I grow process and freeze for use during the winter. I just chop and then minced then freeze. Frozen grounded lemongrass from store bought are good too. I just like the stock part not the leave but the store near me have the kind that's way too much leaves part so I grow my own.
      I've used/seen frozen bamboo shoot or chestnut so I am not sure.

      Thank you, @Alex Trevor-Deutsch. I added some Sesame oil for some nutty flavor and some Canola oil. I often use Canola oil in my cooking.

    Hello, this looks delicious! I was wondering if it would be possible to marinate a pork roast in this sauce and bake it. We are doing a Vietnamese inspired Christmas dinner with pho, fresh spring rolls, etc. Do you think it would work? Thanks 😊

      Hi Laura. I think it would be fine but make sure you give enough oil so it doesn't turn out dry. I've used the tenderize hammer to help achive the tenderness or a little vitamin C or some citrus.
      That's awesome to have a Vietnam inspired Christmas. Sounds like a lot of good cooking choices 🥰. I do crab and asparagus egg drop soup every year and stir fry lobsters. Of course egg rolls can't be missed. Enjoy and have fun cooking!.

      Hey @Yuming Cheng, thanks for your feedback. I would chop up the lemongrass and add to my marinated pork batch. When you grill, the lemongrass will give a great aroma that's smells very good and interesting.I hope this helps. Have a great day.

      @@fishsaucemama Thank You! I used fresh minced garlic, shallots and lemongrass and the sauce was really thick and coated the meat completely. It hits the grill tomorrow. Have a great weekend and thanks for getting back to me.

    I made this for dinner- one child didn't like it (I'm not surprised tho- he's 4 and would live on hot chips if I let him 🤦‍♀️) but the other 2 kids, me and hubby LOVED it!
    Just a suggestion- sesame oil evaporates very quickly when heated and is often used in cold applications, like a salad dressing. We couldn't taste it on the finished pork. Maybe sprinkling a little on the cooked meat would be more flavourful.
