My name is Aida Lugo McAllister and I created this channel so that you can experience the cuisine of the Caribbean - especially Puerto Rican cookery. I had the opportunity to live in Puerto Rico as well as traveling to the neighboring islands, including South America and Dominican Republic. In most of my cooking videos, I provide an introduction to a slice of food history, gardening, useful kitchen gadgets and tools, time-saving ideas and helpful food preparation tips. Some of my recipes are a healthier version of the Puerto Rican cuisine - baked alcapurrias, steamed pasteles, no salt added to our chicken fricassée, baked plantains, etc.
Guanimes (Cornmeal Dumplings)
Guanimes are cornmeal dumplings that are shaped into a pastel or small logs and wrapped in banana or plantain leaves. They are usually boiled in salt water. However, I prefer to steam them. The two main ingredients are fine yellow cornmeal and coconut milk. Guanimes are usually served with stewed codfish.

I got bacalau from Lidl, it's not dried but a frozen steak. Instructions say fry for 5 minutes but it's a very thick fillet with skin. I think I'll cut it into chunks and make a fish pie with mash potatoes. I remember seeing shops in Portugal with cardboard boxes lining the place filled with dried bacalau. The weather was 25C and the stench was enormous. I had menu del dia in a restaurant of bacalau and it was so tender and subtle tasting.
Hola, Bacalao is prepared many ways in different cultures. When desalted and cooked, it is tender and flaky. Bacalao is also packaged and sold based on the preference of a particular culture.

Hola, I don't know what brand you purchased but I purchase the Buena Ventura brand that is boned and skinless.
How does it taste?
Hola Jenny, The malta tastes similar to molasses. The beaten eggs gives it a foamy texture.

El sirope es muy simple porque le faltó el anís estrellado y los clavos. Además se puede mezclar la azúcar blanca y la morena.
Hola Leisa, La receta original para el sirop no contiene anís estrellado ni clavos. Con el tiempo, hemos cambiado los ingredientes para el sirop (añadir o restar). She got some salt cod fish & I was trying unsuccessfully to explain to her over the phone how to desalt it. For someone who has never made this before, would you have approximate amounts for each ingredient for your Sofrito?

At the bottom of page for Sofrito step by step instructions, you will find the recipe for both pounds and for each item. You can also add cilantro 1 to 2 bunches for this recipe.

I'm Puerto Rican n I suffered iron deficiency since my teens years n my aunt n mom would make this for my mom made it exactly like this n my aunt would replace malta with 100% grape juice and it did it's job❤ guess what now I'm 51 and Im dealing with same issues of iron deficiency so ty for this reminder will start making again 😍😋
Hola Marisol, Yes, it was mainly prepared if you felt tired or was deficient in iron. The eggs, however, is what really provides the iron in this drink. Both the malta and grape juice drinks contain a small amount of iron but combined with an egg, it increases the iron content. Take care of yourself and enjoy your weekend!

How do you remove the hull? The hull is very tough
Hola Shelley, The pigeon peas develop in pea pods. Each pod contains an average of 4 to 5 peas. The pod is opened with your fingers, which is demonstrated in the video. There is no outer shell to be removed from the peas itself. Visit aidaskitchenboricua.com for more detail visual instructions.

Hola Nick, That is great news! Culantro is an herb that is not easy to grow like cilantro (it's cousin). However, when it does grow, it is a beautiful long aromatic leave.

Hola Gladys, It is delicious! Henry cooks the meat in a pot with barbecue sauce once it is shredded. He puts the BBQ meat in small containers and stores in freezer. If we are too busy to cook dinner, we have delicious BBQ sandwiches on a bun.

Hola Stella, Thank you! They are normally charcoal grilled but I only have a gas grill. If you have a gas grill, try to maintain the temperature between 360°F to 375°F. The gas grill has a tendency to increase the temperature automatically when you close the lid. I had to lower the temperature gauge several times. I grilled the chicken skewers in two separate batches. However, if you decide to grill them all, the amount of time will differ so check them periodically on the grill. Enjoy!

Hola, I also make and keep individually wrapped pasteles in the freezer. This is an alternative method to serve pasteles without spending time wrapping and tying them in plantain leaves - a much easier way of preparing pasteles without changing the texture and flavor.
