White guy here love soul food. I am in Minnesota and my friends grandma was from Missouri. She made a pork roast (took hours) with Collard greens. Greasy and tasteful as hell. One of my favorite meals of all time. All sorts of southern food. MAN! She made me want to get into being a chef, which I did (RIP Reba) but wow. Was the best. I always liked food (I ate buttered cooked spinach) but man collard greens beat the hell out of that. They stay firm (spinach gets slimy) and they retain that butter and texture that is a lot better to eat... I think I had thirds.

I'm a white dude and the whole "we don't season crap" is more real then you know. I was a head chef and man... I have had to make so many boringly seasoned steaks and pastas for them. Hell try some of England staples and even canada. But we are only privy because we are a melting pot and know the magic of it from the fact we get to experience everyones background in a way.
