@@DawgzMom So, it means you never had a cake from a Bakery or a Grocery store. I worked at a Bakery that the owner learned to Bake from the Chef that made Prince Charles and Princess Diana's wedding cake. Let me, give you the news and open your eyes, that no one does everything from scratch 100%.
Baking is Very Time Consuming, is an Art but is also Science.
You must know your temperatures, watch it closely cause of time while cooking, must make the chemestry work correctly, and if there are flavors, or allergies like for nuts (including cacao or any other nut) must need to know how to use different flours or what to replace for sugar. Even if is vegan, how to manipulate more than 6 different batters and that's not even counting with the several fillings and decor.
Just let that sink in for a few seconds or more.
Yes, the chemestry is there and if is the same way and gets the same results or to deliver the custumer's request then use wjat you may. Just remember this: "Is always easier said than done"

@@tracyjones9265 I've had plenty of cakes from a bakery, or a grocery store, and I don't like most of them! The Market near my home does a more homemade version, I enjoy their cakes, and have paid good money for custom-made cakes.
I'm well aware of the intricacies of baking. I bake sourdough, now there's a science for you.
As far as using boxed cake mix, and canned frosting, I have the skills to do that myself at home, minus canned frosting, cause yuck. Any GOOD bakery, that does custom orders, is happy to tell you what they make from scratch, and what they don't, give you an estimate, and even taste testing. If I'm paying good money for a cake that I expect to look, and taste, good for an event/celebration, I'm asking. Not sure why a huge speel on "chemistry" is your response.... anyways.

Yes, if you never had a cake from Whole Foods or Publix (the nicer kind), then you have not had a good Grocery cake and could try it.
Since you think you know it all, why don't you just bake all of your cakes?
Clearly you talk more than what you know or do. Only a Chef will try to explain to you the Chemistry and how does the real world works in a kitchen. Have a beautiful day! I use boxed cakes a lot, for family Bday cakes. I have learned the hard way that all that support is really needed. Especially when using fondant on the cake. As for pricing, I would figure it out the same way I would a scratch cake. Cost + Time = Price. That's a gorgeous cake and is still worthy of a nice price tag. Great job!!!

Boxed cake mix is (from what I can tell) just dry ingredients. Everything else you put in and how you craft the design is all personal talent, so boxed cake is as good as homemade as far as I'm concerned, and deserves the pricing as such. It was made at home after all😂

I'm hearing so many bakeries now use boxes mixes. It's so time saving to buy mixes in bulk and already has the dry ingredients mixed in. All u do is add your wet ingredients and extras like milk instead of water, extra eggs, extracts, pudding mixes etc. I'm going to make a sheet cake from boxes mix and see if anyone knows it's not from scratch but I guarantee they will ask. My friends always do...I almost always make my frosting from scratch.

  • @HannahMattox

Most home bakers specifically use boxed cake, at least around here, I live in the southern US. It's preferred, actually. Not just making it easier on us, but the clients prefer it. I've never once had a boxed cake of a flavor I like normally that I didn't like from the ready made cake mixes, but I Have hated cakes I made from scratch. Because of that shortcut, we tend to charge a smidge less than bakeries, or bakers in general, who make their own because we are willing to spare a few dollars for our sanity to not have to hand make all of those layers. Also, most people can't tell the difference between homemade and boxed if you do it right 🤷‍♀️ that cake, depending on a few factors, that cake would run for about $125 because it is so tall and there is some chocolate work (even though I refuse to believe white chocolate is actually real chocolate, but everyone believes differently). Also, time crunch mixed with the attitude of the customer, the price could go up or down. I'm considered a professional, but I still only consider myself semi-professional. I still have a lot to learn, but I've had my own business for 2 years, been assisting others in their own cake business for over half of my 31 years of life. I was taught by some pretty amazing people, and honestly, that $125 would be a killer price for that cake. All of my buttercream is homemade, so that would definitely be significantly less if I used a packaged buttercream, which there is also no shame in! It's one of my specialities as a "discount cake" and I knock off at least $10. This cake is beautiful, no doubt, but it's not especially difficult to design, other than those spheres, I mean... And props to you, I still suck at those. But anyhow. I can give you a total price breakdown, but I thought I'd just explain my ADHD train of thought 😂 very nice job, no matter if it was all store bought or homemade!

Wow! What a comment! I love your investment and passion about your cakes. I’ve definitely heard of a lot of home bakers using boxed cake mix. I did a whole video on it. I say if your customers like it then there’s nothing wrong with it! It is a very easy design (though 20 year old me would’ve thought differently 😅). I just started getting the hang of the chocolate sphere thing. I’m sure if you practiced it, you could nail it. Also, I completely agree on white chocolate not being “real chocolate”. I’m more of a dark chocolate girl myself, but I can’t resist the bright white look!

I am self taught (first) and technical taught baker (second) but there are so many things to learn my classes certainly did not cover everything (that would be hard I'm sure) custom cakes and fondant are so foreign to me lol still figuring out my "style" but I know that I'm more of what I call a comfort baker, I enjoy making the things that people grow up with the things that gives them warm fuzzy feelings and reminds them of grandma's hugs. For example chocolate chip cookies, brownies, cheese cake and etc. I enjoy Mini cakes and cupcakes also.. And the funny part I do enjoy creating pate' choux, & creme brulee as well as many of the other things they taught (can't do them operating under the food processing laws in NY sadly, so limiting Lol) but yes slowly I am working out of my comfort zone. If you start with a boxed cake mix and then add in your own ingredient, you can technically say it's homemade well semi homemade. This is what i add to mine, and it definitely tastes homemade and never comes out dry 😁
    A box cake mix
    1/4 cup of flour
    1 cup of sugar
    Pudding mix
    1 1/3 cup of milk
    1/2 cup of butter
    2 TBSP of oil
    3/4 tsp of salt
    1/2 tsp of baking soda
    1-2 tsp of vanilla extract
    1 cup of sour cream
    3 eggs
I also sift the cake mix before i begin mixing everything in, and i bake the cupcakes at 325 for 25-30 minutes.
    You're welcome!

So here in Chicago, cake mix is $2.00 and frosting is $3.00, cost rounded up, total $5.00 plus tax. Don’t you charge for 3 eggs, oil or butter, candy melt and something for the luster dust, then your time? For me, I’d probably charge $50.00 to $75.00. And while we’re talking pricing, what do you charge for your hourly rate? And I’d add in delivery charge, as well as boards and boxes. Tell if that’s to low.

    • @SweetDreamsBakeShoppe
      @SweetDreamsBakeShoppe  3 ปีที่แล้ว +2

I do account for the cost of ingredients and materials, but I charge a lot for time. Rather than an hourly rate, I look at it as what is more technically challenging. For clarity, a more technically challenging cake could take the same amount of time as something slightly easier, but to learn that skill is ‘worth more’ if that makes sense! I have a whole video on how I generally price cakes if you’re interested :). Pricing cakes is such a personal thing and changes so much depending on the area so there is no right or wrong. $70 is approximately $92 Canadian which would be a good deal here for all of that sphere work! Edit: Yes, delivery would definitely be an additional cost!! 🥰

90 canadian dollars. The work and the ingredients. Given its 2022 and how expensive things are and labor itself being expensive, 90 is still a shy justifiable charge amount. It is beautiful artistic and again, the effort and the time and the aesthetics are count as glamourous not to mention how long it can last and the sturdiness behind the cutting all justify 90 or even 100 dollars regardless of box or scratch ingredients. You still bought the box and added your ingredients.

But aren’t there bakeries who use cake mixes, not like the ones you purchase from the grocery store, but packed mix? And if you follow a recipe, aren’t you profiting off someone else’s hard work who created and tested the recipe?

    • @tierra5020
      @tierra5020 3 ปีที่แล้ว +2

@@Diamon335 if you follow someone else's recipe, of course you are. Baking is a science and an art. Mozart didnt invent the piano...Picasso didn't create paint brushes...etc. etc.
Basically once you know that a cake requires flour, sugar, eggs, flavoring, a leavening agent, and rising agent....its up to you to turn it into a masterpiece. Before you know it, you will have created your own unique flavors. If you haven't made it to that point, it's ok. My opinion is my opinion. I can paint but I wouldn't dare try to recreate the 16th chapel and call it my own.🤷🏿‍♀️

I'm looking for a way to make a boxed spice cake mix have a more sense not fluffy texture. Similar to a wedding cake? I want to use a heavy cream cheese frosting and an apple filling from a vendor that's finely chopped. A fluffy cake won't hold up for this application.

My Mom did professional cake decorating most of my life. I lean on the side of a"purest" If I ever ordered a cake for $120,it had better be from scratch & made with QUALITY ingredients! (REAL butter, pure vanilla...)And Yes you Absolutely can tell the difference. If you can't, I believe you've probably been eating processed & chemical food so long your system is numb.
I also did some cakes in my time. I had someone with a lot of money,so cheap she insisted I make het sons cake out of a box mix or use margarine & artificial vanilla. I told her I was dorry, but she would need to ask someone else. I don't use those things.
