That’s how I do it. Except I use filtered water. Also, I don’t worry too much about having a freshly activated starter. If my starter looks somewhat ok, meaning not completely flat, I go ahead and make bread. So far so good. In my case I noticed a clear difference in the rise by using organic flour. But other than that, I keep it simple.
