    Italian from Italy here, responding to the call. Usually we don't freeze our gnocchi, we eat them freshly made. You only freeze them if you had to make them in advance or you made too much. If you freeze them, make sure to throw them in the boiling water as soon as you get them out, don't make them de-freeze before or they'll get soggy.
    For the flour: gnocchi are supposed to have as little flour in them as possible, or they will become unnecessarily heavy. Rose here nailed the pumpkin-flour ratio, but if you use a different brand of pumpkin puree (or you make your own like I will, cause pumpkin puree is not really a thing in Italian grocery stores) you may need more or less than this. If you do this at home it's better to start with even less flour and then add more gradually until the 'dough' can be rolled without falling apart. Hope this is helpful. Will definitely try the pumpkin gnocchi, maybe next Sunday, thanks for the idea!

      @@AnHeC That's not true, there's vaccination for the flu and very good therapeutics. There's no such thing that works even close as well as all we have for the flu for Covid-19. Also, this is a pandemic, the flu however is not. More people die and get sick of Covid-19 than of the flu, so don't be silly by jeopardizing your life and this of others if all it takes, is not to celebrate huge parties and keep a little more distance than usually. Next year, things will be different...

      Don't ever compare Covid-19 to the flu. For starters the flu isn't one kind of virus. It's a whole family with hundreds of different viruses.
      And while Covid 19 might mutate (and already has) this is not guaranteed to establish a new strain with enough difference to render vaccines and or immunity useless.

    Good way to prevent burning garlic with olive oil I think is to heat the pan up first without olive oil in it, then add the oil in.

    Heat up garlic as the oil heats up so adding to pan at the same time. Infuses the oil and garlic together and you’ll be able to measure how hot the oil gets based on the garlic.

    The gnocchi looks awesome! I think it would be really tasty with a lemon butter sauce topped with some fried sage leaves. Pumpkin, butter, and sage are such a classic cozy fall flavor for me. Thanks for the ideas Rose!

    I tried the pumpkin fries for dinner... I took some liberties with the sauce and topped with cilantro instead of green onions. Hands down, one of my favorite recipes.

      @@RoseofSharon12 yes that would be overwhelming! Don’t try to be perfect. One step at a time :)
      I am 5 years vegan and don’t have everything in mason jars either. I’m sure there’s some vegans that never do (are you trying to do that for environmental reasons, to be no waste? Because I’d focus on veganism first for a few months and then when it feels comfortable being vegan introduce no waste items.)
      For appliances keep it basic and as you can afford them get new ones. I’ve been using a Nutribullet for years, don’t have a VITAMIX myself for example.

    I made the gnocchi twice. The first time as instructed. It was AMAZING. My family went bonkers over it. The second time I swapped out 1/3 of the flour for quinoa flour and the pasta was good but not as amazing. I’ll go back to original. So easy and delicious! Thank you 👏

    I have the same problem with garlic (And onion if it is super finely minced) so I always fry it on very low heat and then I bring it up when I add the rest of the ingredients, from there the heat is more even so it don't burn as long as you keep an eye on it

    Hi Rose I just told my boyfriend I have to watch “Rose” she’s always making pasta..I am Italian my mom cooked homemade pasta all the time.. she would make gnocchis with egg flour and cooked potatoes.. make the gnocchis put wax paper on a cookie sheet flour it lay out the gnocchis and pout them in the freezer like for Christmas or Easter you can make several trays in advance..

    OMG I made the French fries with that creamy cheesy sauce. We both loved it. It was absolutely delicious and believe me I tried lot of different vegan cheese sauces , but your recipe put all of them in the shade - lol 😂 thank you so much for sharing ❤️

      Em V ...mmm yes they are!!! I tested so many fried veggies in my air fryer for sides but mostly for snacking lol but I rub either olive oil or vegan butter on them and season them of course b4 air frying them. Like right now I placed potatoes and corn on the cob in my air fryer both I rubbed vegan butter and seasoned with salt pepper and parsley that’s it. I became lazy to cook because of my fryer lol. It’s so fast and easy

    I use too dried hard sweet yams by slow cooker then make soup or sweet soup too add more beans. You can add dried plain seaweed into chia seeds or Vietnamese ones, but bigger cold drinks or cold coffee, taste amazing. Try it. You'll thank me later.

    I don't understand why Canadian TH-camrs promote American retailers when they don't ship to Canada. How do you receive your products?

      It doesn't make sense that Cheap Lazy Vegan would promote a USA company unless they make a exception for youtubers from Canada. But it does state on the website that it doesn't ship outside of the United States.

They probably make an exception in her case because she she has a pretty decent subscriber number and that's reaching a lot of people at once. It sucks they don't ship to Canada though...or have another market here so shipping would be much cheaper...

      she has a significant number of viewers / subscribers from the US. Mary's Test Kitchen (another Canadian vegan foodtuber) actually mentioned this as the reason in a comment in one of her Thrive Market sponsored videos. In fact in the case of MTK, she mentioned that her viewers / subscribers from the US outnumber the Canadians.

    Hi ! Can anyone tell me ? I never had dried cranberries before only cranberry juice and I really don't like the bitter taste of it, are dried cranberries bitter as well ? I would like to make the broccoli salad but idk :/

    Boil your cut chips for 5 minutes, dry, toss, drizzle and Place in air fryer. Best way as the sides catch but don't go black and hard.

    Crazy how easy that pumpkin gnocchi is to make!! I was thinking sage brown butter (vegan obvs) sauce 😋 Yum! Def gonna try! 🙏🌱 Also, 'cup of pumpkin puree' is a tongue twister. Say it five times fast...couldn't do it 😂 😂

      Cashew cream. Just soak cashews in water. Blend. Add some garlic or whatever spices. So creamy.

    I learned from a Italian cook, to add 2 tablespoons of water to the oil to stop the garlic from burning. It works but the oil pops everywhere and it freaked me out.

    You can saute nut butter instead oil too if nut butter left over or about expired. Save lot money and give yr food interesting instead same old dishes like exotic ethnic food, some very some awful. Hihihihih. You can use about dried roots, stalks as soup base.

    I heat up my garlic on low heat and it STILL always burns. I dont get it. I swear it's this stove/oven. It cooks everything extra hot/fast.

      When you are cooking, it's best to add the garlic last. That's one of the best secrets for not burning garlic or having it become bitter/sour

    I believe if you add your garlic at the same time as the oil and let them heat up together, instead of adding the garlic to hot oil, it wouldn't burn.

    Would much rather eat something like this than something that resembles a dead animal. Absolutely no offence to anyone that does eat the turkey substitutes, just...dunno, with how realistic they are becoming it feels a bit weird.
