I don't know if this is the proper venue for recommendations - if you are ever in Miami, I would suggest The Den which is a "hidden" omakase restaurant inside Azabu Sushi in Miami Beach. Great quality & service. About once monthly they also have a collaboration with other Chefs (not necessarily sushi). To give you an idea, the next collaboration is on 3/8 with Chef Alberto Landgraf from Oteque in Brazil.

(Not aimed at you), I guess many dinners who don’t speak a little Chinese + Japanese may not notice. But, if you watch everyone except the head chef, I don’t think they have much formal training. (Yes that sounds judgy- but I did enjoy it and wi go back with new expectations.)
World's best? You only go to Japan and New York. Go to Vietnam, go to Florida, go to Washington, go to Thailand, go to California. Don't just stay in New York.

Fatty tuna with Caviar was deff my favorite bite when I went. I didn't enjoy how rushed it was though
