My favourite curry is brinjal and recently I discovered if you pre-roast the eggplants first it gives it an even richer, yummier flavour. I’m even attempting to grow my own eggplants this year for the first time. I love cauliflower though. That looks so delicious. Thank you for sharing.

WOW... I'm not a Veggie or a Vegan but I LOVE Cauliflower and have Aloo Gobi everytime I get a takeaway. I have also been cooking my own BIR curry for years and as you know the sauce is blended so when you finished the Onion Tomato base I was thinking " I would blitz that " and you did! I must admit, the Beetroot and cream is something that I wouldn't of thought of but this version looks absolutely Great and can't wait to cook it! I can't wait to see what people come up with for you to cook next... I love a Madras but we all know how to cook that right ;-) Love your channel!

Here in America the korma is rich with yogurt, coconut milk, and cashews; it is very mild and just a little sweet. This Naan has almonds and raisins in. Yumyumyum
Not to sound typical, but *chicken korma* is hard to beat. Your recipe here reminds me a little of *aloo gobi* and another favourite curry, but the addition of nuts and cream make this even better!

Chetna would it make a drastic difference to the dish if I did not fry the potato and cauliflower instead steaming them for a while or add directly to the sauce to cook❔❔ I'll explain. I am totally unable to eat any fried foods, it makes me dreadfully ill. But would really like to make this dish😛🇿🇦
We sometimes use melon seeds in place of cashews. You could probably try that. It will give you similar taste and texture, but I'm not sure about it with regards to the allergy.
