Yes. The mixer handled the load. I just did the same recipe a second time. I had to watch and make sure the mixer didn’t overheat (Kitchenaid) as 25 minutes is needed to knead:) you can rest the mixer if you feel the metal warming. We love this recipe. And yeah. Gram measurements would be welcome.
Made these rolls they were so easy I whipped up the dough in the morning, worked all day and baked with dinner they turned out perfect thank you for the recipe

I do this with sourdough cinnamon roll recipie and i would imagine it would be similar. They go in the freezer after shaping them and then they thaw / rise during that second rise. For the cinnamon rolls they get set out the night before and are left all night to be baked in the morning. With rolls I would take them out in the early morning then leave them all day for the 2nd rise from frozen? Maybe give that try!
