So I witnessed this live on a recent trip to India. I had the same question myself. From what I came to know.. when the bamboo gets charred evenly black on all sides, the chicken inside is cooked to perfection. Typically take an hour to hour and half on a open fire pit.
I want to eat some of Grandpa foods.. Its look delicious and clean in this pretty nature by his amazing Soul..
