My mother is 85 yrs old so she is the original old skool. My fritters can never taste as good as hers but she also puts tomato but mashes it out! Lickle scotch bonnet in mine tho as I like a lickle kick in a it!
I made this KETO style 😋 I used most of what you use but I use Almond flour instead with two egg instead of water, also to eliminate the oil I use a mini waffle maker with a little spray of olive oil. It turned out Yummy as well👌🏽😍👍🏽

Watch the salt amount, if you haven't soaked and boiled the salt fish long enough then it's still salty. So taste a piece of the salt fish to see how salty it is. @Rose Jackson...there are various types of salted fish, you don't have to use cod but it's better if the fish is salted or smoked. I've used smoked cod & smoked haddock to make fritters too & it's just as nice

After getting most of d salt out (either by soaking for good while, or scalding ), D remainder of it will flavour D batter. Combine ingredients with flour , small amount of baking powder (optional) & water to ur desired thickness. Leave to sit for awhile...then fry in regular oil ( not olive oil...thank u
Nice mi chef , but coconut oil should be used instead. Olive oil when heated becomes harmful to our bodies and should not be used for frying at high temperatures.

The only thing. For me, I don't add salt because the saltfish is already salted. Even when you boil it, there's still some salt left in it.

Hey Chef, I too am a Chef, I put little baking powder in my fritters, my mother made hers same way, family recipe over 100 years
Baking powder allows the fritter to absorb too much oil.
