How Cantonese Mom Cooks Soy Sauce Chicken

  • Indulge in the delectable flavors of Cantonese cuisine with this simple yet scrumptious Soy Sauce Chicken recipe. Unlike traditional methods that require extensive preparation, this version streamlines the process without compromising on taste.
    Ingredients:
    Cleaned, cut chicken pieces
    1 bowl of water
    1/2 bowl of soy sauce
    2 tablespoons of mushroom dark soy sauce
    2 tablespoons of Chinese rice wine
    1 piece of Chan Pei (dried orange peel)
    1/2 block of Chinese brown sugar
    1/2 block of Chinese ice sugar
    A few slices of ginger and garlic
    Instructions:
    Combine all ingredients in a pot and bring to a boil.
    Once boiling, reduce heat to low and let simmer for about an hour until chicken is fully cooked and tender.
    Remove chicken from pot and let cool before chopping into small pieces.
    Drizzle sauce over chicken and serve hot with desired sides.

    2. Is this the same dish the Chinese in Jamaica call "Roast Chicken '?
    3. Is ice sugar the same as rock sugar?
    4. Would it spoil to the taste to allow it to cook longer?
    5. How long should the chicken dry for and must it be completely dry?

    I'm going to make this for CNY dinner tomorrow. I vaguely remember my mom putting in lemon slices in her soy sauce chicken. Would that clash with the chan pei (orange peel)? Thanks for sharing.

      @@CantoneseFoodRecipes 4 slices of lemon gave it a nice tangy taste. The only issue I had was losing the skin to the bottom of the pot otherwise it was really tasty! Can you explain the purpose of pouring hot water over the chicken before cooking?

    The spoon is not a tablespoon and it holds barely half a tablespoon of liquid. I hv done some measuring before, a Chinese soup spoon would be closer to one tablespoon.

      It depends on the size ...we have similar spoons and of different sizes ...some are really big which will be close to the tbs size and some are smaller closer to half tsble spoon ...

    You shouldnt cook with Olive oil

      @@christytsang3730 It didn't look to me like she was using a very high heat when she was frying. I made it tonight and did it on medium heat and it came out excellent. The olive oil never gets to an unhealthy temp.
