Carrot Cake Recipes usually have raisins...are raisins not common to Italian desserts? Thanks for clarifying raisins are NOT your personal preference? ❤️ the idea of Grandmother’s booze addition...what liquor would she use? Rum...Chianti...Grappa? Maybe if you soak some golden raisins in booze?! LOL

+Filomena Mollica yes it will. Best way to freeze is to put the cake in there first for a few hours or more with no wrapping. Then pull it out when frozen and wrap it very well with plastic wrap. Then put it back in. To thaw, the wrap should come off easy when frozen and then place in a dry cool shaded area for a few hours and all will be well. Thank you, Joe.

Love pineapple & raisins & coconut in my carrot cake also 😋
I love it with pineapple. Regular carrot cake tastes like spice cake to me. The pineapple gives it more flavouring and is so moist
