  • In the world of competitive brewing, a lot of different variables come into play. If you are a beginner, you might not even notice the difference between papers, I should know because I was a beginner too once and this will help you greatly understand the game of paper. In this episode we will talk about the difference of the Hario Paper Filter, and the Cafec Abaca+ Filter.

    I am a big fan of cafec filters. I use the Abaca filters most often and the T90’s if i want a faster draw down. And their prices are fair for the quality they offer 👍

      Yes i completely agree! And they're supposedly more environtmental friendly.

    Thanks for this video. I had actually just run out of paper filters, and I'm thinking of buying Cafec Abaca+ since I've only ever tried Hario. But now, I'm having second thoughts because I use a Timemore Chestnut C2, and from my understanding, it does produce some fines (although I've never checked it comparatively with other grinders). Do you have any thoughts for my situation?

    • @darylbuenocoffee
      @darylbuenocoffee  3 หลายเดือนก่อน +1

      yes it does produce microfines a bit more than other grinders - but as i've said in the video you can actually use this to your advantage - when your grinder produces a lot of microfines you can use this to exactly slow down the drawdown of your brew giving you more body and more sweetness in your end cup. of course it will always have it's downside of over extracting so it will require a bit of adjustment at first but once you get the hang of it, congratulations! you learned a new skill :)

      I have a C2 also! Try using recipes with lower agitation, for example no stirring as it's super aggressive and you'll lose all clarity. I developed my own recipe where I only use a top swirl at the end, eventually I'll get to making a video. 😏
      I also suspect it's going to be challenging to use recipes for coarse grounds, as you're gonna have a lot of microfines anyway.
      Also I think nowadays that coffee beans open up after 20 days and maybe peak after 30 days!

    I haven't tried Cafec, but I tried Kinto filters and I think they're just superior to Hario! They're slower, so maybe go for Hario only if your brew stalls all the time. Or if you have bad coffee beans and don't want to waste good filters)

      I agree, the paper is very much negligible if you arr brewing only at home. I mean you can adjust this on other parameters.

      @@darylbuenocoffee It just came to me that the faster filters like Hario may be better if you want to make bigger brews. I almost always make a 300g cup for myself, so it's not a problem I have, but when I want to make a bigger brew - that's pretty much impossible with a filter like Kinto.
      Actually I do think the Kinto ones taste significantly better)

      @@Dimich1993 yes i completely agree, bigger batches would require an adjustment with the settings bec first of all the surface area of the paper doesnt change exponentially as the dose does. So let's say you would brew a batch of 700ml coffee. For a 1:15 ratio you would need around 45g dose of your coffee. This would actually fit in a 02 v60, so technically the 700ml is a 5-6 cup serving but the paper didn't really get bigger for 5-6cup dose. It is designed to fit 4 cups only but even then you need a bit of adjustment for brewing for cups bec doing so it is already prone to stalling and clogging bec of the amount of microfine particles in this big of a dose.
