Explosion proof requirement for electrical is anything under 18" above finished floor as all combustible vapors settle to the floor as they are lighter than air. Sorry you are having to deal with unqualified personal making expensive and incorrect decisions. In my small distillery I built a 6" curb around the still area and pull ventilation along the floor and out of the building to insure that no ignitiable build up of vapors is present. Even know it is impossible to build up enough to ignite hahaha. I did this in an attempt to ward off the evil spirits you are dealing with. Best of luck to you guys!!!!

    Where is your distillery located?

So they are classifying your distillery as a "Class 1, Div 1 area? Definition: Class I, Division 1 classified locations. An area where ignitable concentrations of flammable gases, vapors or liquids can exist all of the time or some of the time under normal operating conditions. A Class I, Division 1 area is comparable to a gas station for instance. It is the most stringent of classified electrical installations, that yes, require rated panels, junction boxes and sealing fittings that are meant to prevent the mixture of an "arching" electrical connection with flammable vapors and liquids. To me, the only place that would seem relevant for this is in the distillation area. Heck, and I thought just not using an opne flame was safe enough.

If the building is brick or steel and away from other buildings don't need all that jazz. Few sprinklers fine
