Insta pot 1 pork roast cubed or shred after cooked Season meat 2 cups water, 3 tablespoons each pepper, garlic powder, knor chicken bouillon, 2 cans red enchilada sauce (prefer las palmas) Pressure cook 35mins If you need shred meat Add in your hominy cook another 5 mins
I grew up in MN and had never heard of Maid Rites before meeting my Husband, who's from Iowa. I now make it several times a year and love how simple the recipe is. Go Hawks!

Gonna be making posole this week for the hubs! I like to toss everything the crockpot with garlic, onion, salt, Mexican oregano, bay leaf and broth and I make the chile separate (softened NM red chile pods blended with garlic onion powders and a little cumin and Mexican oregano plus cayenne for extra heat) so my toddlers can have some without chile. I like to serve mine with lime wedges, more oregano, cabbage, chopped onion, radishes and a bolillo roll
Love Maid Rites! I do mine open faced with cheese, onion, pickle, ketchup and mustard and chips to scoop up loose meat! If I’m road tripping through Iowa, I know 2 stops to hit Maid Rite restaurants. Yum!
Out of curiosity I looked up the Maid-Rite sandwich and found an article in the Quad City Times from 2010. It said the creator of the sandwich steamed his meat rather than frying/browning it, then stirred in a ‘slurry’ of seasonings. From that perspective, the crockpot makes sense as it doesn’t really brown things well. I’m impressed that the restaurant owner was able to franchise 4 stores by the end of the 1920s and weathered the Great Depression! The article said the company stayed in the family until 1982. Pretty neat!
Jen, you live in my hometown. I remember as a child, going to the Maid-Rite at what I believe was the first Maid-Rite in Muscatine. I am obviously, much older than you are, and I have loved Maid-Rites all my life!! Whenever I get back to Muscatine, I always have Maid-Rites at least once...hopefully more.
I've never tasted real Maid-Rites but I have made them before. I did like them. Yes, they are similar to Sloppy Joe's but a bit plain. It is a great dish for picky people who like plain tasting food. I could see how children would like them too.

Hey, Jen! Would you ever consider a kitchen tools video on things you use often (again?) INcluding how the heck you keep your knives sharp? My Misen knife stays dull, no matter what, and I watch your knives just slice through - how do you do it? And what other not so sexy tools do you use?

Pozole is one of the best soups. Love serving it with corn tortillas to soak up the broth.
We have a sandwich in Kansas similar to the MaidRite. It’s called a NuWay. Their slogan is “crumbly is better”. They are so good!

Yes the steam! I remember that now - we actually have a maid rite about 5 miles away from us and I only eat there once a year but it’s delish!
