nice video but it would be better if you make the recipe in gram instead of cups. 2.5 cups sifted all purpose flour (if you used sifted) is about 280-290 grams but not sifted is about 350 gm. and water 1.5 cups is about 360 grams which is more than 100% hydration. I think it might be wrong.
