Deep Fried Fish (Mackerel)

- Deep Fried Fish (Spanish Mackerel fillets)
Cooking time: 20 min
I large Spanish mackerel fillet
Salt to taste.
Oil required for deep frying
Spices:
½ tsp cumin powder
1 tsp turmeric powder
1 tsp chilli powder
2 tsp coriander powder
Method:
1. Wash fish well and diced to lard 4 pieces or 6 pieces if preferred.
2. Add the abovementioned spices and salt to marinate the fish for 15mins. Longer the marination the better taste. Add lemon juice (is optional).
3. Fried two pieces at a time to prevent overcrowding. If you use bigger pan or wok, can fry all pieces at one go. Fry at medium flame.
4. Turn the fish now and then to prevent burning.
5. After 5 mins, remove fish from oil and place in a rack or kitchen towel to drain some oil resulted from deep frying.
6. Garnish with fried curry leave or coriander. Garnish is optional.
To serve:
With rice, fish curry or dhal curry with one side dish or salad.
