    This is helpful. Its really just a meat paste cooked as a loaf. My favorite food in the entire world right now is a gyro with spicy hummus spread. Better than any cheeseburger.

    Great recipe. Try to use a food processor next time if you can. If you slap the meat down a few times on a cutting board, it gets the air out! It's also better to make the night before and cut it when it's well chilled, you can cut nice thin slices easier. Plus the flavor has had time to bloom. Just passing on advice from a Greek friend!!! ❤❤✌🏼❤❤

      Is the refrigeration step before or after cooking?

      @@andrewh3684Refridgerate after you cook it, overnight. It’s really easy to cut nice uniform slices. Let slices sit out for a few then you can toss it in a hot pan w a little oil and YUM!!!!!

    You should've refrigerated the meat and then cut it to prevent the meat from crumbling.

    The seasonings are very nice your method not so much let it cool overnight or 3 hours at least

    This is very helpful, thank you! I was looking for a way to make gyro lamb meat without a rotisserie. Could you use just lamb or does it need to be 50/50?

      Soak it for a bit in soap and water, wash it by hand, and sanitize in the dishwasher.

    Why do you bury you recipe at the bottom of the page on your website, underneath all that useless information and ads? It's a very frustrating, I don't want to read an article about the history of gyro meat I just want to learn how to cook it- so frustrating.

    Onions and garlic should have gone through the blender first, the consistency of this was more like a meatloaf, and it was very bland. Didn't taste like any Gyro meat I've ever had. ☹

      @@RazzleDazzleLife I did and still Gyro meat does not contain big chunks of onion or garlic, And you used no binder, The meat was never compressed. I was forwarded a link to this video knowing what the outcome would be. I have been making Gyro meat for a restaurant for over 30 years, yes I'm a butcher. I'm glad you like what you made. "Didn't taste like I wanted" yours does not taste like Gyro meat. Sorry I know I sound mean but I am just very blunt.

      ​@@beaverc2884Gyro meat always needs more seasoning than you think. A tip is to take a small piece and microwave it and try it, if it's bland so is the rest so add more seasoning. Then you won't mess up your entire batch. As for the consistency, you can add bread crumbs and just knead it so the meat homogenizes. Sometimes you need to take initiative to achieve the result you want and not rely solely on the recipe for making it a success, she gave you the guidelines.

    Damn. There’s a couple helpful comments that I appreciate here but the rest were just rude. If you see something that you think should be changed to suit your taste, go right ahead and do it but maybe try to explain the difference instead of just insulting the person trying to share what works for them….     This ain't Gyros. Gyros is pieces of meat, steak like, on a spit (souvla) that has to be roasted, while turning around.

      Well, a traditional Gyro is Lamb and Beef combined. I have never seen a lamb mate with a cow, so of course it's minced.

      @@flatsixfun2008 again, gyros is not made with minced meat. It is mainly pork or chicken (I have seen beef ss well) meat, it the form of filets, on a long vertical spit. In which region of Greece you have seen gyros made with minced meat?
